Update to latest version of Docusaurus and Yarn v4 (#42)
* - Switch to modern yarn (v4)
- Update packages
- Pin postman-code-generators version due to https://github.com/postmanlabs/postman-code-generators/issues/760
- Upgrade to latest nodejs LTS (v22)
- Update create-providers-json.ts to not cause type errors
